How I Saved Time, Money, and Stress With Freezer Cooking

During the last month of my pregnancy I experimented with freezer cooking for the first time.  I knew the next month was going to be very busy as I welcomed my seventh child into the world.  I was drawn to the promise of peace that freezer cooking would bring to my life during the busy mealtime hour, but I was also scared about all the planning, work, and energy it would take to pull this off (not to mention finding a creative way to keep all my little helpers busy but still let them participate.

With that being set I jumped right in feet first and just started “doing” so that I wouldn’t have time to be overwhelmed and it worked! With a little bit of organization I was able to double three dinner meals for a total of six meals to put into my freezer plus flash freeze two bags of meatballs!

RECIPE #1

CROCKPOT HEARTY BEEF STEW x 2

  • Large pack of stew meat
  • Two cans sliced carrots, drained
  • Eight potatoes peeled and diced
  • Two cans of tomato paste
  • Two cans of cream of mushroom soup

Directions:

Half all ingredients listed above and place into two separate large ziplock bags.  For example, divide stew meat portion in half placing each half in a separate bag, then throw a can of peas, and carrots into each bag etc.  Going down the ingredient list. Mark bags “Stew” with a sharpie and freeze. To cook stew, place ziplock bag in a bowl in the fridge to defrost overnight.  Then next morning throw into a crock pot on low and you will have a nice meal by dinner time! Add beef broth and seasoning to taste.

RECIPE #2

HAM AND POTATO SOUP x 2

Items to place in large ziplock bag:  (this makes two bags worth)

  • 12 potatoes peeled and diced
  • One package of diced ham
  • Two large cans of cream of potato soup

Directions:

Half all ingredients listed above and place into two separate large ziplock bags.

To cook soup, place ziplock bag in a bowl in the fridge to defrost overnight.  The next morning throw into crock pot on low and you will have a nice meal by dinner time! Add chicken broth, cream cheese and seasoning to taste.

RECIPE #3

CHEESY PEPPERONI MEATBALL CROCKPOT DUMP X 2

Items to place in large ziplock bag:

  • Forty meatballs
  • One large package of sliced mini pepperoni
  • Four cups of mozzarella cheese
  • Two jars of spaghetti sauce

Directions:

To cook Cheesy Pepperoni Meatball Crockpot Dump, place ziplock bag in a bowl in the fridge to defrost overnight.  The next morning throw into crock pot on low and you will have a nice meal by dinner time! Serve over egg noodles.
